Hypobaric Storage is a kind of advanced technology on fresh and live foods at present. The principle and technological characteristic of Hypobaric were stated. Experiments of storage for fruits and vegetables such as snap bean were periodically carried out in hypobaric chamber made by ourselves. Experimental feature and process were described. Variation of appearance
quality
and weight of snap bean in hypobaric storage were compared with those of Controlled-Atmosphere Storage and the traditional storage. Finally
the experimental results were objectively analyzed and summarized.
